This kind of new food material γ-aminobutyric acid (GABA) is transformed from sodium L-glutamic acid as raw material by fermentation of Lactobacillus (Lactobacillus hilgardii) with the following processing steps, such as pasteurization, cooling, activated carbon filtration, spray drying steps, which conforms to the processing techniques of new food material γ-aminobutyric acid in the announcement(2009, 12th) approved by the Ministry of health of the People's Republic of China on September 27, 2009. GABA content of the product is more than 20%. This product can be used in beverages, cocoa products, chocolate and chocolate products, candies, baked goods, snack, but not in infant foods. It can also be added in healthy foods or functional foods.
